Nina's Antipasto



Each year at Christmas time, Nina does a rather magnificent sit down dinner for twenty-eight of her cousins. Part of the tradition includes her antipasto salad. Her homemade dressing is the secret to making it scrumptious.  Crushed fresh garlic is the dressing's most important ingredient.

The dressing is prepared fresh and chilled and is poured on just before it is served.

What you need:

Salami
Pepperoni
Artichokes
Pickled mushrooms
Black olives
Green olives
Iceberg Lettuce

The dressing:

1 tablespoon grated cheese
1/2 teaspoon oregano
1/2 teaspoon basil
1 garlic clove crushed
salt
pepper
1/4 cup red vinegar
1/8 cup water
5/8 cup olive oil
